Naming this article “The bear Season Three Premiere Explained' might feel like we're missing the point, don't we? On the most obvious level, there is nothing to explain about “Tomorrow”. It's a Carmy Berzatto origin story, but we already know Carmy's origin: He grew up in an emotionally broken family, respected his older brother Mikey, studied under some of the world's greatest chefs, was the psychological pillow for Joel McHale, returned to Chicago. after Mikey commits suicide and takes over the struggling family business. “Tomorrow” fills in some blanks, but it's far less interested in telling us what happened than it is in making us understand how this all felt to Carmy. It's an atmosphere, not a mystery.
So, why are we here?
Well, Carmy spends much of the episode in various kitchens, real and imagined, wearing similar outfits. Between that and the non-chronological nature of the narrative—which follows Carmy from his first cooking job to his return to Chicago after Mikey's death—fans who love The bear but you haven't obsessively studied the career path of his hero you might feel a little lost at the end. So here's a breakdown of most of what we see in “Tomorrow,” depending on where the action takes place.
THE BEAR (Chicago)
When does this happen? Sometime right after the end of the season two finale, but mostly the next morning.
Who is there and what is Carmy wearing? In the final flashbacks, Carmy (Jeremy Allen White) is with Sydney (Saint Entebiri), his jacket undone. The next morning, Carmy arrives at The Bear dressed in a blue sweater and later changes into a white T-shirt and blue apron.
What is happening here? Right after the finale, Carmi apologizes to Sydney for abandoning her by locking her in the entryway, then leaves an apologetic message on Richie's voicemail for the things she said. The next morning, Carmy arrives at the empty restaurant, cleans it up, draws up his “non-negotiable” list, and begins experimenting with new dishes, all inspired by things he's learned at previous stops in this mini-biography. We also see Carmy in his apartment studying a burn scar on his palm and Marcus (Lionel Boyce) lying at his mother's bedside hours after her death. Pain and sorrow are inescapable for both.
THE FRENCH LAUNDRY (Yountville, CA)
When does this happen? We're at the beginning of Carmy's career as a professional chef — day one, in fact. He directs — aka interns, as Ritchie briefly did in Ever back in season two's “Forks” — under the legendary Thomas Keller.
Who is there and what is Carmy wearing? It's Carmy and Keller, no other notable characters. Carmy wears a white chef's jacket and a blue apron, with The French Laundry's name embroidered on the jacket, visible just above the top of the apron.
What is happening here? Not much, at least in the context of “Tomorrow.” The season finale gives us a full version of the scene where Keller shows Carmi how to properly pinch a chicken and remove its scissors.
EVER (Chicago)
When does this happen? After Carmy's time at The French Laundry.
Who is there and what is Carmy wearing? Carmy works alongside chef Andrea Terry (Olivia Colman), Luca (Will Poulter) and Adam (Adam Shapiro). An outfit similar to the French Laundry, but without the embroidered name.
What is happening here? Carmy quickly rises through the ranks, impressing Chef Terry first with his ability to make peas and soon with his general skill and creativity. He starts out as a peer of Luka and Adam and eventually supervises them. It's Not Smooth Sailing : Andrea has to scold him a few times, both for being too loud and aggressive when giving orders to Luka, and for not cooking a dish well. Overall, though, she's terribly impressed with him.
NOMA (Copenhagen)
When does this happen? After Carmy worked at Ever for a while after Chef Terry sent him to Copenhagen to expand his skills, as Carmy does for Marcus in season two.
Who is there and what is Carmy wearing? We see Carmy stalking Noma's actual chef, René Redzepi, but mostly we follow Carmy (dressed in a dark blue t-shirt and apron) as he works alongside a bunch of anonymous Noma employees.
What is happening here? Carmy enjoys the peace and beauty of Noma and his farm, enjoys staying on the same houseboat where Marcus lived in season two, and notes how Redzepi uses photo collages to inspire new dishes. She later sends a photo to Mikey (Jon Bernthal), who shares it with Tina (Liza Colón-Zayas), in a scene that will be seen in greater context in the sixth episode of the season.
BERZATTO FAMILY HOME (Chicago)
When does this happen? During Carmy's time at Noma — specifically, the Christmas trip home seen in season two's “Fishes.”
Who is there and what is Carmy wearing? Carmy wears a blue rugby shirt and is surrounded at various points by most of the characters that were in “Fishes”. In a major chunk of the new material — given that much of it is archival “Fishes” clips — he stands with Uncle Jimmy (Oliver Platt), Richie (Ebon Moss-Bacharach), Ted Fak (Ricky Staffieri) and Neil Fak ( Matty Matheson), and close to Claire (Molly Gordon).
What is happening here? Again, most of this is just snippets from the previous episode, but we see the team watching a flatbed trailer truck remove the car that Carmy's mom crashed into the living room at the end of “Fishes,” with Claire shooting a like take a look at her future boyfriend.
O'HARE AIRPORT (Chicago)
When does this happen? Before Carmy moved to New York to start the next phase of his career – although whether that's before he started working with Daniel Boulud or David Fields isn't entirely clear.
Who is there and what is Carmy wearing? Carmy is with his sister Natalie (Abby Elliott), wearing a winter jacket and a backpack.
What is happening here? Natalie chases Carmi away on his trip, worried about her brother, and tries to get him to get her some money for the trip. Before they part, she tells him, “Let it rip, Bear,” and when they're on the plane, she discovers that she put the cash in his jacket pocket while he wasn't looking.
DANIEL (New York)
When does this happen? Unclear. It seems to fit sometime between French Laundry and Ever, since Carmy's interactions with Daniel Boulud are similar to his interactions with Thomas Keller – a raw kid who is eager to learn from a teacher. But when he tells Chef Terry about his culinary background, the only things he mentions are his time at the French Laundry and his childhood around The Original Beef of Chicagoland. So let's put it here, since we know it went straight from Ever to Noma, and since it went from its next stop back to Chicago for good.
Who is there and what is Carmy wearing? As with The French Laundry, it's really just Carmy (wearing his chef's whites and sometimes a toque) and a real-life celebrity chef.
What is happening here? Boulud shares some of his art with Carmy (yes, chef, “we listen to the music”), who is excited about the opportunity. We also see Carmy crashing on the couch of family friend Stevie (John Mulaney), who lives in New York. So this could be happening while he works at Daniel and/or could be happening at our next business stop.
EMPIRE (New York)
When does this happen? Immediately before the events of the first season.
Who is there and what is Carmy wearing? Carmy wears a white chef jacket without an apron and works for David Fields (Joel McHale).
What is happening here? Carmi suffers various forms of verbal abuse from David. Sydney, enjoying an expensive trip to New York during culinary school, tries Carmy's blood orange hamachi, which she describes to Marcus in the season one finale as the best meal she's ever eaten. While David bullies him again, Carmi screens the calls from Natalie until she texts him “CALL ME” in all caps and informs him that Mike is dead.
THE ORIGINAL BEEF OF CHICAGOLAND (Chicago)
When does this happen? At various points in the first season, but also during the events of this season's sixth episode.
Who is there and what is Carmy wearing? Carmy in various clothes, but most often a white shirt. Other characters in archive clips, Mikey and Tina in part of a new scene.
What is happening here? It's mostly season one material, but we do get this preview of Mikey and Tina's conversation. The episode also gives us some other images of the Original Beef crew away from the restaurant, including a worried Richie knocking on Mikey's door at home and everyone gathered for Mikey's funeral. Well, almost everyone: as established in the series premiere, Neil Fak didn't come to the funeral – we see Ted consoling Richie's ex-wife Tiffany, played by Gillian Jacobs – while a devastated Carmy didn't make it out of car, and watched the whole thing from across the street.
